Monkey Bread Bites

The other morning, I was craving monkey bread. I've never made it, but I have had it several times. I went online in search of a recipe for it. I stumbled across the Rhodes Dough website, and they had posted this recipe. I thought I'd give it a shot. It was nice that I could use Rhodes dough instead of making my own. This method is a lot more time consuming than the usual way, but I liked having the bites smaller. It seemed more cinnamony and sugary with each bite. I'll be making it again for sure.
Monkey Bread Bites

12 Rhodes Dinner rolls, thawed but still cold
6 T butter, melted
2 T corn syrup
½ c brown sugar
2 t cinnamon

Icing:
1 c powdered sugar
1 T butter, melted
1-2 T milk
½ t vanilla

Preheat the oven to 350 degrees.

Break each dinner roll into 6 pieces. Get two bowls. In the first, add the corn syrup and butter. Stir it up. In the other, combine the cinnamon and sugar. Put a few dough balls into the butter mixture.

The ones in the picture have a little cinnamon on them because I had already don a bunch of them, so my hands were covered in cinnamon and sugar. Yum.

Transfer the dough to the cinnamon-sugar bowl. Coat the pieces.
Grease a muffin tin. Put six pieces of dough in each section. Cover it with plastic wrap and let it rise until double in size. For this part, I boil water in a glass container and put it in the microwave with the pan. It seems to rise faster.

Once it's doubled in size, bake it for 15-20 minutes. Cool for a few minutes and remove them to cool.

Combine the glaze ingredients and drizzle over the Monkey Bread Bites.

They were well received among my family members. They are like a little bundle of gooey doughnuts with delicious glaze. I like the sound of that.
