Lemon Streusel Muffins

Oh, how I love lemon stuff. Lemon chicken, lemon poppy seed bread, lemonade... all of the above. Ooh- don't forget lemon bars. So, so good. I found this recipe, again in a Taste of Home magazine, that I love. Lemon muffins.... mmm...mmm...good.
Lemon Streusel Muffins
adapted from Taste of Home magazine April/May 2008makes 24 muffins
3 cups flour
2 c sugar
3/8 t baking soda
1/4 t salt
4 eggs
1 c sour cream
1 c butter, melted
1 1/2 T grated lemon peel
1 T lemon juice

Streusel:
1/2 c flour
1/2 c sugar
3 T cold butter

Glaze:
1/2 c sugar
1/3 lemon juice

Preheat the oven to 350.

Combine the flour, sugar, baking soda, and salt. In another bowl, whisk the eggs, sour cream, butter, lemon peel, and juice. Add the dry ingredients and mix until moistened. Fill muffin cups 3/4 full.

For the streusel topping, put the flour and sugar in a bowl. Put the butter in the bowl. Get a fork and smoosh the butter into the flour mixture.
When you're done, you'll have crumbs like this:

Sprinkle the Streusel topping onto the muffins.
Bake the muffins for 20-25 minutes or until a toothpick inserted comes out clean. Cool for five minutes.

While they are cooling, prepare the glaze. Take the muffins out and put them on the serving plate. Drizzle the glaze over the muffins.
