Cake Bites

During a playdate with some friends over the summer, their mom busted out these little scrumptious things. They are cake and frosting all wadded up into a ball and dipped in chocolate. What a delight! I have been dying to make them since I tried them. I finally did! They take a lot of time and effort, but man, are they good! Here's a picture:
Sometimes I crack myself up. That is what they'll look like after long since they are so good, they'll be gone in a matter of minutes. But really- here's what they look like:
Cake Bites:
1 box cake mix
1 can frosting
1 package dipping chocolate

Bake the cake in a 9x13 pan according to package direction. Let it cool. Once it's cool, scoop it out of the pan and into a mixing bowl. Add about 3/4 the package of frosting. I mixed it by hand, but you can use a mixer. My arm was getting a bit tired after mixing the second one by hand. If I mixed these by hand for a living, I would have a buff Arnold Schwartzeneggar right arm.

The cake and frosting will mesh together and look like a glob of tasty goodness. Form the mixture into balls. Place them on a cookie sheet lined with wax paper. After I had done them all, I went online to look up tips on coating them with chocolate so it doesn't look horrendous like my first batch. I found that Paula Deen makes them. She actually freezes the dough for a couple of hours before scooping them with a melon baller. I didn't do that, so mine don't look all perfect and round. However, I do think that freezing or refrigerating the dough for an hour will make it easier to handle.

Freeze them for three hours or overnight. This is a long time to wait, but trust me- I didn't do this for the first batch, and I had the hardest time dipping those things in the chocolate. My fingers and counter-top were covered in chocolate- although that does sound like a good time to be had by all. :)

Melt the dipping chocolate according to package directions. Get the wads of dough out of the freezer. Poke one with a toothpick and lower it into the chocolate.

Pull it back up. This, my friends, is where the frozen bites come in handy. If they aren't frozen, that ball will never come out of the chocolate. I left mine over the chocolate to let it drip a little bit. To release it, either twist the toothpick between your fingers or use another toothpick to push it off. Either way, you need to dab a little more chocolate on the top where the toothpick came out.

Place them on a wax paper-lined cookie sheet and refrigerate until they are ready to eat. I drizzled a little chocolate over the top of mine.

The flavors that I used are chocolate cake, chocolate frosting, and milk chocolate dipping chocolate. I also did red velvet cake with cream cheese frosting and white chocolate dipping chocolate. They were scrumptious.
